If you want him back, reload another save to where he is alive and then try to prevent his death from happening. If this is on PC and you don't mind cheating, you could use console commands to bring him back if you want. Yea he's perma dead, I've just got a list and gold as recompense for his death from Jarl Balgruf. Unluckily I can't load save because I made 3 saves before I actually found his body in grass.

Should you stick to the killing quests or can you have some fun killing people without risking losing a crucial game character? Typically, any NPC that has a unique name will not Respawn. However, if they're needed for a Quest or something, an NPC is usually marked as Essential and unable to be killed this is mostly so the game won't mess up completely if someone important dies! I'd say play however you want, and what you decide to do in Skyrim is completely up to you.
But I tend to Quicksave before I go on killing sprees, if I do so at all lol. A named NPC will go to a holding cell a while after death. I'm guessing NPCs don't respawn but I want to check that too just in case.
Guards are fairly easy to kill making them an easy way of getting Dark souls so long as they do respawn. Generic NPCs will respawn some time after they die.
